Ratatouille

Ingredients

2 peppers

2 cans crushed tomato

2 yellow onions

1 aubergine

1 zuccini

3 crushed garlic cloves

0.5 teaspoon thyme

0.5 teaspoon rosemary

2 bay leaves

Salt

White pepper

Tabasco

2 avocado

1 cup non full fat crème fraiche

1 pressed garlic clove

Salt and pepper

 

Do this

Fry chopped onion and garlic in olive oil in a pot

Add the rest of the chopped vegetables and fry for another minute

Add crushed tomatoes

Add thyme, rosemary, bay leaves, salt, white pepper and tabasco

Cook the ratatouille for at least 20 min on average heat with the lid on

Mash the avocado, mix with crème fraiche, pressed garlic, salt and pepper
