Chickpea curry


1 cup quinoa

2 cans chick peas (or 250 g dry if you cook them yourself)

2 yellow onions

Rapeseed oil

1 teaspoon cumin

1 tablespoon shredded ginger or 1 teaspoon ginger spice

4 garlic cloves

4 tablespoons lime juice

1 teaspoon coriander

0.5 teaspoon turmeric

1 pinch cayenne pepper

1 can crushed tomatoes (about 400 g)

Salt and pepper


Do this

Fry oil and cumin until it gets some color

Add chopped onion and fry until it’s transparent

Press garlic, mix with ginger, lime juice, coriander, turmeric and cayenne pepper

Add chickpeas, crushed tomatoes and the spice mix in the pot, stir well

Let the stew cook with a lid 10-15 minutes

Add salt and pepper

Serve with quinoa
