Pesto quinoa


1 cup quinoa

1 garlic clove

1 red onion

2 zucchini

Olive oil

Salt and pepper

1 tray of cherry tomatoes (about 250 g)

3 tablespoons red pesto

1 pack feta cheese (about 150 g)


Do this

Boil the quinoa

Fry chopped garlic, red onion and zucchini in oil about 5 min in a pan

Add salt and pepper

Mix quinoa with vegetable mix, cherry tomatoes and pesto

Add feta cheese on top and some olive oil

Only take new roads today, for example to and from work
