Halloumi stew


2 yellow onions

5 garlic cloves

2 packs halloumi

2 zucchini

5 pieces celery

2 peppers

2 cans crushed tomatoes

0.25 cup tomato puré

1 tablespoon vegetable fond

2 tablespoons apple cider vinegar

2 cans chick peas

Salt, pepper, oregano


Do this

Fry chopped onion and garlic in a pot

Add chopped halloumi and fry for a couple of minutes

Chop all vegetables and add in the stew for a couple of minutes

Add crushed tomatoes, tomato puré, vegetable stock and apple cider vinegar

Let everything boil for a couple of minutes, then add chickpeas

Add spices and let it boil softly under a lid for 30 minutes

Take it easy
